PUMPKIN SOUP
Ingredients:
· 1kg ripe, orange pumpkin, peeled and with non-orange parts removed
· 125ml water
· 1 litre milk
· salt and pepper
· 1 tsp (5ml) honey
To serve 4:
Dice the orange pumpkin flesh. Put it in a pan with the water and simmer
until soft (about 15 minutes).
Puree, add the milk, bring to the boil and simmer for 5 minutes. Season
and add the honey (optional). The pumpkin seeds may be toasted at Gas
Mark 6, 4000F, 2000C until brown and served as a side dish.
