GAZPACHO
Ingredients:
· 7 tomatoes, skinned and finely chopped
· ½ cucumber, peeled and diced
· 5 spring onions, trimmed and finely sliced
· 2 cloves garlic, crushed
· 1 tbsp (15ml) red wine vinegar
· 1 tbsp (15ml) olive oil
· 450ml tomato juice
· ¼ tsp ground cinnamon
· ½ tsp soya sauce
· 2 tbsp (30ml) finely chopped chives
To serve 4:
Mix the vegetables together in a large bowl. Add the remaining ingredients
and mix together gently.
Chill the soup and allow it to stand for a couple of hours. Serve.
