Cabbage Corner
 

BROCCOLI SOUP

· 750g broccoli
· 900 ml vegetable stock
· 1 tbsp dried mixed herbs
· 250g crème fraiche or soured cream
· Seasoning

To serve 4:
Steam the broccoli until tender – about 6 minutes. Together with the stock and herbs, liquidise until smooth. Stir in the cream and season to taste. Heat through until just below boiling point and serve immediately.
