SPICY TOFU SALAD

Ingredients:
· 175g firm tofu (bean curd), diced
· 3 tbsp olive oil
· 2 tsp soy sauce
· juice of ½ lemon
· 2 cloves garlic crushed
· 1 tsp grated fresh root ginger
· salt and pepper
· 125g bean sprouts
· 125g mangetout
· ½ red pepper, cored, deseeded and finely sliced
· 3 spring onions, finely sliced
· 1 tbsp sesame seeds

To serve 4:
Mix together the oil, soy sauce, lemon juice, garlic, ginger and seasoning and pour over the tofu. Leave to stand for 20 minutes.
Then, excluding the sesame seeds, mix together the rest of the ingredients and add to the tofu and dressing. Toss well, turn into a serving dish and sprinkle with sesame seeds.
