Cabbage Corner
 

POTATO AND DILL SALAD

Ingredients:
· 750g new potatoes, scrubbed
· 4 spring onions, sliced
· 3 dill pickles, sliced
· 2 tbsp chopped dill
· 75ml sour cream
Dressing:
· 3 tbsp olive oil
· 1 tbsp wine vinegar
· 1 tsp coarse grain mustard
· salt and pepper
· ½ tsp brown sugar

To serve 4:
Cook the potatoes until tender. Chop roughly, place in a bowl, pour over the dressing and mix well to coat.
Add the remaining ingredients, mix together well and serve warm.
