ORIENTAL COLESLAW
Ingredients:
· 250g cabbage, finely shredded
· 100g beansprouts
· 1 red pepper, cored, deseeded and finely shredded
· 2 celery sticks, finely sliced
· 2 tbsp chopped chives
Dressing:
· 1 tbsp wine vinegar
· 1 tbsp olive oil
· 1 tbsp dry sherry
· 1 tbsp tahini paste
· 1 large clove garlic, crushed
· 1 tbsp apple juice
· 1 tsp soy sauce
Gradually add the vinegar and apple juice to
the tahini and garlic, mixing thoroughly to a smooth paste. Add the rest
of the dressing ingredients.
Mix together the cabbage, bean sprouts, celery and red pepper in a large
bowl. Pour in the dressing and mix together thoroughly. Turn into a serving
dish and garnish with the chives.
