COLESLAW WITH YOGURT AND MUSTARD DRESSING
Ingredients:
· 250g white cabbage, shredded
· 125g carrots, grated
· 50g unsalted peanuts
· 3 spring onions, chopped
Dressing:
· 90ml (6 tbsp) natural yoghurt
· 90ml (6 tbsp) mayonnaise
· 5ml (1 tsp) wholegrain mustard
· salt, pepper
To serve 4:
Mix together the vegetables and nuts. Blend the dressing ingredients together
and toss into the salad. Serve.
