BUTTER BEAN SALAD
WITH CREAMY, HORSERADISH DRESSING
Ingredients:
· 125g butter beans from can
· 7 tomatoes, sliced
· watercress
Dressing:
· 60ml (4tbsp) natural yoghurt
· 30ml (2tbsp) soured cream
· 15ml (1tbsp) white wine vinegar
· 15ml (1tbsp) olive oil
· 1 clove garlic, finely chopped
· 5ml (1 tsp) creamed horseradish
· salt, pepper
· ½ teaspoon brown sugar (optional)
To serve 4:
Arrange the beans and tomatoes. Mix the dressing ingredients together
and toss into the salad. Garnish with watercress and serve.
