Cabbage Corner
 

SPIKY BULGAR WHEAT SALAD

Ingredients:
· 100g bulgar wheat
· ½ litre boiling water
· 2 tbsp sunflower oil
· 1 small onion, finely chopped
· 3 tomatoes, chopped
· ½ tsp ground cumin
· ½ tsp ground coriander
· 1 tbsp tomato puree
· 50g pine kernels
· 1 tbsp chopped mint
· 1 tbsp chopped chives
· 1 tbsp lemon juice
· salt and pepper

To serve 4:
Soak the bulgar wheat in the boiling water for ½ hour. Strain and extract as much water as possible.
Fry the onion in the oil until translucent, add the pine kernels and cook until they start to brown. Add the spices and fry for a minute. Finally add the remaining ingredients and the bulgar wheat and mix thoroughly. Allow to cool and serve.
