RAW BEETROOT AND CARROT SALAD WITH AVOCADO DRESSING

Ingredients:
· 250g raw beetroot, peeled and diced
· 250g carrots, peeled and diced
· 3 large sticks celery, diced
· juice of ½ lemon
· 1 tsp (5ml) honey
Dressing:
· 1 avocado, peeled
· juice of 1 lemon
· 30ml (2 tbsp) natural yoghurt
· 1 large clove garlic, crushed
· 5 ml (1 tsp) honey
· salt, pepper

To serve 4:
Combine the lemon juice and honey. Toss first the carrots, and then the beetroot in the mixture to keep them fresh. Blend together the ingredients for the dressing. In a flat bowl, layer the vegetables, the beetroot at the base, then a mixture of carrot and celery above. Pour over the dressing and garnish to taste.
