Cabbage Corner
 

AVOCADO, ORANGE AND CHICORY SALAD

Ingredients:
· 2 avocados, peeled, stoned and sliced
· 2 oranges, peeled and with pith removed
· 2 heads chicory
· 150g crisp lettuce, sliced
· 1 tbsp pine kernels
· 1 bunch watercress
Dressing:
· 3 tbsp olive oil
· 2 tbsp lemon juice
· 1 tbsp clear honey
· salt and pepper

To serve 4:
Mix the dressing ingredients together well, and pour over the avocado as soon as it has been sliced. Ensure the avocado is completely coated.
Cut the oranges into segments and add the segments and any juice to the avocado.
Cut the chicory into 1 cm slices and add it with the lettuce to the bowl. Toss together thoroughly and sprinkle with the pine kernels. Garnish with watercress.
